This flavorful soup is absolutely delicious. It is so easy, but yet so filling! As well, it is 0 points on Weight Watchers! Yummy and healthy!

Ingredients

  • 1 rotisserie chicken, deboned
  • 1 can rotel
  • 1 can chili beans (white)
  • 1 can kernel corn (drained)
  • 1 can green chilies
  • 1 quart chicken broth, low salt
  • 1 jar salsa verde
  • 1 can black beans, canned

How To Make chicken salsa verde soup

  • Step 1
    Shred up chicken, and place in crock pot or dutch oven on stove top. (I have also used three cooked chicken breasts when I did not have a rotisserie chicken)
  • Step 2
    Drain corn, and pour over chicken.
  • Step 3
    Rinse and drain black beans, and pour over chicken.
  • Step 4
    Add all other canned ingredients.
  • Step 5
    Pour salsa verde over everything.
  • Step 6
    Pour chicken broth over everything, and stir well.
  • Step 7
    Cook for 4 hours on high in crockpot OR 1 hour on stovetop.
