chicken or turkey wild rice chowder

I love soups and chowders and this one I made using leftover turkey that my husband had roasted for us. It is so easy and was very creamy and yummy. Hope you think so too.

Ingredients

  • 2 cups sliced fresh carrots or 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 2 - 1/2 cans chicken broth (14 1/2 ounces each)
  • 2-2/3 cup cubed cooked chicken or turkey breast
  • 1 package (8.8 ounces) ready to serve long grain and wild rice
  • 1/4 cup half and half cream
  • 1/8 teaspoon pepper

How To Make chicken or turkey wild rice chowder

  • Step 1
    In a large saucepan or dutch oven kettle, saute the carrots, onion and celery in butter until tender. Stir in flour until blended; gradually add the chicken broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Once thickened stir in the chicken/turkey, rice, cream and pepper; heat through.
  • Step 2
    I served with parmesan and nut muffins.
