I love soups and chowders and this one I made using leftover turkey that my husband had roasted for us. It is so easy and was very creamy and yummy. Hope you think so too.

Ingredients

  • 2 c
    sliced fresh carrots or 1 cup shredded carrots
  • 1/2 c
    chopped onion
  • 1/2 c
    chopped celery
  • 3 Tbsp
    butter
  • 3 Tbsp
    all purpose flour
  • 2 - 1/2 can(s)
    chicken broth (14 1/2 ounces each)
  • 2-2/3 c
    cubed cooked chicken or turkey breast
  • 1 pkg
    (8.8 ounces) ready to serve long grain and wild rice
  • 1/4 c
    half and half cream
  • 1/8 tsp
    pepper

How to Make Chicken or Turkey Wild Rice Chowder

Step-by-Step

  1. In a large saucepan or dutch oven kettle, saute the carrots, onion and celery in butter until tender. Stir in flour until blended; gradually add the chicken broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Once thickened stir in the chicken/turkey, rice, cream and pepper; heat through.
  2. I served with parmesan and nut muffins.
