Ingredients
- 3 boneless skinless chicken thighs diced into small cubes
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 medium onion small diced
- 1 cup carrots julienned
- 1 cup cauliflower florets
- 4 cups chicken stock
- 1/4 cup fresh parsley chopped
- 1 teaspoon fresh thyme leaves minced
- 1 cup acini di pepe pasta
- salt and pepper to taste
- fresh grated parmesan for serving
How To Make chicken in pasta broth with veggies

Step 1In a large pot add oil. Add the chicken and brown on all sides. Saute the onion, garlic, carrot, and cauliflower and cook until lightly colored.

Step 2Stir in the chicken stock, parsley and thyme and bring to a boil. Add the pasta and lower the heat and simmer 10 minutes.

Step 3Taste and season with salt and pepper. Serve with shredded Parmesan cheese
