chicken cheese soup

I got this free recipe from a can of Chicken Breast. The original recipe says Cheddar but I used Swiss cheese instead and turned out delicious. I serve it with crackers or toast. Very good addition if you're having a light main course.

Ingredients

  • 1 cup carrots, grated
  • 1/4 cup green onions, sliced
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk (i use light milk or 2% is okay too)
  • 1 1/4 cups chicken broth
  • 12 1/2 ounces canned chicken breast (350 g)
  • 1 cup swiss or cheddar cheese, grated
  • 1/2 teaspoon worcestershire sauce
  • 1/8 teaspoon black pepper
  • 1/4 cup yellow onions, chopped

How To Make chicken cheese soup

  • Step 1
    In a medium saucepan, cook carrots, green onion, onions about 10 mins or until tender but not browned. Stir in flour. Slowly add milk, chicken broth, worcestershire sauce and black pepper. Cook and stir until thickened and bubbly. Stir in chicken and cheese.
  • Step 2
    Cook and stir over low heat until cheese melts. Serve hot.
