Ingredients

  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 medium carrots thinly sliced
  • 1 bunch baby broccoli trimmed.
  • 1 teaspoon fresh thyme
  • 6 cloves garlic
  • - salt and pepper
  • 3 - boneless skinless chicken thighs cut into small chunks
  • 2 - 32 oz cartons of chicken stock
  • 2 medium zucchini peeled and spiralized
  • 1 cup chopped fresh spinach

How To Make chicken and vegetable zoodle soup

  • Step 1
    In 5 qt. Dutch oven add the oil over medium high heat. Add the onion, carrots, broccoli, thyme salt and pepper. Cook for about 5 minutes. Add the garlic and cook 30 more seconds. Stir in the chicken stock and the chicken. Bring to a boil. Reduce to a simmer and simmer 10 minutes. Add the zucchini noodles and the spinach. Cook 2 more minutes. Taste and adjust seasonings.
