Ingredients
- 2 pounds chicken, cut up
- 1/2 pound turkey sausage
- 1/2 cup bell pepper, finely chopped
- 2.5 cups roux
- 1 teaspoon red pepper, ground
- 1/2 cup green onions, finely chopped
- 9 cups water
- 2 cups onions, finely chopped
- 1/2 cup celery, finely chopped
- 1.5 teaspoons salt
- 1 - bay leaf
- 2 tablespoons parsley, fresh and chopped
How To Make chicken and turkey sausage gumbo

Step 1Remove the skin, fat and wings from the chicken and discard.

Step 2Spray the inside of as large skillet with non fat cooking spray and place over high heat.

Step 3Brown the chicken, turning often; Remove the skillet from the heat and move the chicken pieces to a platter.

Step 4Add 1 cup of the water to the skillet, scraping the bottom to loosen all of the browned bits; Return the chicken to the skillet and set aside.

Step 5Place the remaining 8 cups of water in a 5 quart dutch oven over high heat and bring to a boil.

Step 6Add the chicken and pan juices, along with the rest of the ingredients, except for the green onions and the parsley.

Step 7Cook, uncovered, 25 minutes, stirring occasionally.

Step 8Stir in the onions and the parsley and cook for 5 more minutes.

Step 9Remove the bay leaf before serving.
