Ingredients

  • 2 pounds chicken, cut up
  • 1/2 pound turkey sausage
  • 1/2 cup bell pepper, finely chopped
  • 2.5 cups roux
  • 1 teaspoon red pepper, ground
  • 1/2 cup green onions, finely chopped
  • 9 cups water
  • 2 cups onions, finely chopped
  • 1/2 cup celery, finely chopped
  • 1.5 teaspoons salt
  • 1 - bay leaf
  • 2 tablespoons parsley, fresh and chopped

How To Make chicken and turkey sausage gumbo

  • Step 1
    Remove the skin, fat and wings from the chicken and discard.
  • Step 2
    Spray the inside of as large skillet with non fat cooking spray and place over high heat.
  • Step 3
    Brown the chicken, turning often; Remove the skillet from the heat and move the chicken pieces to a platter.
  • Step 4
    Add 1 cup of the water to the skillet, scraping the bottom to loosen all of the browned bits; Return the chicken to the skillet and set aside.
  • Step 5
    Place the remaining 8 cups of water in a 5 quart dutch oven over high heat and bring to a boil.
  • Step 6
    Add the chicken and pan juices, along with the rest of the ingredients, except for the green onions and the parsley.
  • Step 7
    Cook, uncovered, 25 minutes, stirring occasionally.
  • Step 8
    Stir in the onions and the parsley and cook for 5 more minutes.
  • Step 9
    Remove the bay leaf before serving.
