Ingredients
- 1 - chicken, whole with skin and bones removed
- 2 large red bell peppers, roasted
- 1/2 cup onion, chopped
- 2 cups chicken broth
- 2 tablespoons lime juice
- 1 tablespoon cilantro, fresh and chopped
- 1/2 teaspoon salt, optional
- 1/4 teaspoon pepper
- 2 - garlic cloves, crushed
- 1 cup jicama, cubed
How To Make chicken and roasted pepper soup

Step 1Set oven control to broil. Place chicken on rack in broiler pan on top rack.

Step 2Broil chicken 15 minutes, turning once, until done.

Step 3Cut into 1/4 inch strips.

Step 4Place peppers and onion in blender or food processor - cover and blend until smooth.

Step 5Heat pepper mixture, broth, lime juice, cilantro, salt, pepper and garlic to boiling in 2 quart saucepan then reduce heat.

Step 6Simmer 15 minutes.

Step 7Stir in chicken and jicama and heat until hot.
