chicken, whole with skin and bones removed
2 large
red bell peppers, roasted
1/2 c
onion, chopped
2 c
chicken broth
2 Tbsp
lime juice
1 Tbsp
cilantro, fresh and chopped
1/2 tsp
salt, optional
1/4 tsp
garlic cloves, crushed
1 c
jicama, cubed

How to Make Chicken and Roasted Pepper Soup


  • 1Set oven control to broil. Place chicken on rack in broiler pan on top rack.
  • 2Broil chicken 15 minutes, turning once, until done.
  • 3Cut into 1/4 inch strips.
  • 4Place peppers and onion in blender or food processor - cover and blend until smooth.
  • 5Heat pepper mixture, broth, lime juice, cilantro, salt, pepper and garlic to boiling in 2 quart saucepan then reduce heat.
  • 6Simmer 15 minutes.
  • 7Stir in chicken and jicama and heat until hot.
