Ingredients

  • 1
    chicken, whole with skin and bones removed
  • 2 large
    red bell peppers, roasted
  • 1/2 c
    onion, chopped
  • 2 c
    chicken broth
  • 2 Tbsp
    lime juice
  • 1 Tbsp
    cilantro, fresh and chopped
  • 1/2 tsp
    salt, optional
  • 1/4 tsp
    pepper
  • 2
    garlic cloves, crushed
  • 1 c
    jicama, cubed

How to Make Chicken and Roasted Pepper Soup

Step-by-Step

  1. Set oven control to broil. Place chicken on rack in broiler pan on top rack.
  2. Broil chicken 15 minutes, turning once, until done.
  3. Cut into 1/4 inch strips.
  4. Place peppers and onion in blender or food processor - cover and blend until smooth.
  5. Heat pepper mixture, broth, lime juice, cilantro, salt, pepper and garlic to boiling in 2 quart saucepan then reduce heat.
  6. Simmer 15 minutes.
  7. Stir in chicken and jicama and heat until hot.
