  • 8 oz
    okra, trimmed
  • 1/2 c
    white vinegar
  • 1 c
  • 2 Tbsp
    olive oil
  • 2.5 lb
    chicken, pieces
  • 1 c
    onions, coarsely chopped
  • 2 tsp
    minced garlic
  • 28 oz
    tomatoes, drained and diced
  • 1/2 c
    white wine, dry
  • 1 tsp
  • 1 tsp
    cinnamon, ground
  • ·
    "just a pinch" of salt
  • 1/4 tsp
    cayenne pepper
  • 1/2 tsp
    dried oregano

How to Make Chicken and Okra Stew


  1. Preheat the oven to 400 degrees.
  2. Place the okra in a bowl with the vinegar and water and let soak for 20 minutes then drain and pat dry.
  3. Combine and gently mix everything together, being careful not to crush the okra.
  4. Cover the casserole and place it in the preheated oven.
  5. Immediately reduce the heat to 350 degrees and cook for 40 minutes.
