Ingredients

  • 8 ounces okra, trimmed
  • 1/2 cup white vinegar
  • 1 cup water
  • 2 tablespoons olive oil
  • 2.5 pounds chicken, pieces
  • 1 cup onions, coarsely chopped
  • 2 teaspoons minced garlic
  • 28 ounces tomatoes, drained and diced
  • 1/2 cup white wine, dry
  • 1 teaspoon sugar
  • 1 teaspoon cinnamon, ground
  • - "just a pinch" of salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano

How To Make chicken and okra stew

  • Step 1
    Preheat the oven to 400 degrees.
  • Step 2
    Place the okra in a bowl with the vinegar and water and let soak for 20 minutes then drain and pat dry.
  • Step 3
    Combine and gently mix everything together, being careful not to crush the okra.
  • Step 4
    Cover the casserole and place it in the preheated oven.
  • Step 5
    Immediately reduce the heat to 350 degrees and cook for 40 minutes.
