Ingredients
- 1 boneless skinless chicken breast
- 1 teaspoon egg white
- pinch salt
- 1 teaspoon cornstarch mixed with 1 tsp water
- 8 stalks asparagus trimmed and chopped into pieces
- 3 cups chicken stock
- cilantro for garnish
How To Make chicken and asparagus soup

Step 1Cut the chicken breast into thin slices. Season with salt. Place in a bowl and add the egg white and cornstarch slurry. Set aside.

Step 2In a wok or dutch oven add the stock and bring to a boil. Add the asparagus and cook about 5 minutes.

Step 3Rinse the chicken and add to the soup. Cook 3 more minutes. Taste and adjust seasoning for salt and pepper. Garnish with cilantro
