Ingredients

  • 8 pounds chicken bones, chopped in half to expose the marrow
  • 1 large onion (unpeeled) quartered
  • 2 large carrots, quartered
  • 4 ribs - celery (leaves & all) quartered
  • 4 whole sprigs parsley
  • 2 whole sprigs thyme
  • 8 whole - black peppercorns
  • 3 whole - cloves
  • 1 - bay leaf
  • 1 clove galic, smashed
  • 5 quarts cold water

How To Make bunyan's kickin' chicken stock

  • Step 1
    Dump all the ingredients in a large dutch oven
  • Step 2
    Bring to a rolling boil over high heat
  • Step 3
    Lower heat to slow simmer
  • Step 4
    Simmer slowly for 4 hours
  • Step 5
    Strain in a cheesecloth lined colander
  • Step 6
    Cool to room temperature
  • Step 7
    Store in tightly sealed mason jars in the fridge (Keeps about a week)You should get a yield of about a gallon
