onion (unpeeled) quartered

carrots, quartered
4 ribs
celery (leaves & all) quartered
4 whole sprig(s)
parsley
2 whole sprig(s)
thyme
8 whole
black peppercorns
3 whole
cloves
1
bay leaf
1 clove
galic, smashed
5 qt
cold water

How to Make Bunyan's Kickin' Chicken Stock

Step-by-Step

  • 1Dump all the ingredients in a large dutch oven
  • 2Bring to a rolling boil over high heat
  • 3Lower heat to slow simmer
  • 4Simmer slowly for 4 hours
  • 5Strain in a cheesecloth lined colander
  • 6Cool to room temperature
  • 7Store in tightly sealed mason jars in the fridge (Keeps about a week)You should get a yield of about a gallon
