Old time family favorite. This stew will feed a small crowd or just your family and freezes well for just a heat on another day.

Ingredients

  • 2 - (4 lb.) stewing chickens
  • 1 pound salt pork, sliced thin or chopped
  • 8 cups freshly cut corn
  • 10 cups sliced peeled tomatoes
  • 4 cups diced peeled potatoes
  • 8 cups butter beans (lima beans)
  • 2 - medium onions, chopped
  • 1/4 teaspoon ground red pepper
  • - salt and pepper to taste

How To Make brunswick stew

  • Step 1
    Cut up chicken. Cover with water in heavy kettle; cook until meat fall off the bone, adding water if necessary.
  • Step 2
    Add salt pork. Add vegetables and seasoning.
  • Step 3
    Simmer slowly until tender and mixture is thick and well blended.
  • Step 4
    Serve hot.
