(4 lb.) stewing chickens
1 lb
salt pork, sliced thin or chopped
8 c
freshly cut corn
10 c
sliced peeled tomatoes
4 c
diced peeled potatoes
8 c
butter beans (lima beans)
medium onions, chopped
1/4 tsp
ground red pepper
salt and pepper to taste

How to Make Brunswick Stew


  • 1Cut up chicken. Cover with water in heavy kettle; cook until meat fall off the bone, adding water if necessary.
  • 2Add salt pork. Add vegetables and seasoning.
  • 3Simmer slowly until tender and mixture is thick and well blended.
  • 4Serve hot.
