Stove Top

    (4 lb.) stewing chickens
  • 1 lb
    salt pork, sliced thin or chopped
  • 8 c
    freshly cut corn
  • 10 c
    sliced peeled tomatoes
  • 4 c
    diced peeled potatoes
  • 8 c
    butter beans (lima beans)
  • 2
    medium onions, chopped
  • 1/4 tsp
    ground red pepper
  • ·
    salt and pepper to taste

How to Make Brunswick Stew


  1. Cut up chicken. Cover with water in heavy kettle; cook until meat fall off the bone, adding water if necessary.
  2. Add salt pork. Add vegetables and seasoning.
  3. Simmer slowly until tender and mixture is thick and well blended.
  4. Serve hot.
