Ingredients
- 8 cups water
- 4 stalks lemongrass
- 1 - inch chunk galangal
- 10 - kaffir lime leaves
- 10 - thai chilies
- 5 cloves garlic
- 1 pound boneless skinless chicken breast cut into bite size pieces
- 1 cup oyster mushrooms chopped
- 2 medium roma tomatoes
- 2 medium white onions chopped
- 1/4 cup brown sugar
- 1/2 cup each fish sauce and lime juice
- 1 bunch cilantro chopped
How To Make authentic tom yum with chicken

Step 1Add the water to a large pot. Smash the lemongrass, garlic, and thai chilies with a mallet. Add to water along with galangal and tear up the lime leaves adding those too.

Step 2Bring to a boil and reduce heat to a med and simmer 10 minutes. Strain the broth and discard solids. Add the chicken, mushrooms, and onions.

Step 3Chop the tomatoes into small pieces and add that to the soup with the fish sauce and sugar. Cook 3 to 4 minutes. Stir in the lime juice and add the cilantro. Serve
