My German mom used to make homemade chicken soup and add Eierstich (egg custard - see recipe: https://www.justapinch.com/recipes/soup/other-soup/eierstich-egg-custard-soup-garnish.html?r=1) If you make the soup with no noodles, it could easily be gluten-free. This version is a typical Amish recipe, especially with the apple included.

Ingredients
- 3 pounds chicken
- 2 quarts water
- 1 1/2 cups chicken stock
- 2 cups carrots, chopped
- 2 cups celery, chopped
- 1 cup onions, chopped
- 1 - tart apple, cored and chopped (optional)
- 2 teaspoons salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- 4 cups egg noodles (homemade if available - omit if going gluten-free)
- - eierstich - egg custard garnish (optional - adds protein, not carbs!)
How To Make amish chicken soup

Step 1Place chicken in a soup pot with 2 quarts of water. Cover and cook for 2 1/2 hours, or until chicken is tender.

Step 2Remove chicken from the pot and debone. Strain the broth. Return chicken to the broth.

Step 3Add chicken stock, veggies, apples (if using) and seasonings until vegetables are soft.

Step 4Add noodles and cook for another 8-10 minutes. Before noodles are done, add (optional) Eierstich - Egg Custard (see recipe) and heat until warm.
