almost marly's chicken soup

Over 30 years ago,a fellow nursing student and good friend & I used to share lunch,this is one of my favorite lunch she would bring. I never thought to ask for the recipe(we had big plans to always be friends) but this is my version of the soup as I remember it.It's very close and my family & I enjoy it. Unfortunately after graduation,we lost touch and I've never heard from Marly again.

Ingredients

  • - 6-8 chicken thighs and legs
  • - 2-3 chicken bouillon cubes(like knorr)
  • - 3 small tomatoes,coarsely chopped
  • - 3 small onions,coarsely chopped
  • - 1 c carrots,coarsely chopped
  • - 1 small head of cabbage(quartered)
  • - 1 potato,coarsely chopped
  • - 1 serrano pepper,whole
  • - 1 chayote squash,coarsely chopped
  • - garlic cloves,crushed
  • - 1-2 small bay leaves
  • - black pepper.to taste
  • - salt,to taste
  • - cilantro,chopped
  • - lime or lemon,quartered,optional

How To Make almost marly's chicken soup

  • Step 1
    While cutting and preparing the vegetables, boil chicken in a pot of water with 1 onion and the bouillon cubes. In a blender,blend 1 onion,1 tomato and 2 cloves garlic with water until smooth. Heat a skillet until hot,add 2 T oil,sauté remaining tomato and 2 garlic cloves until tender. Skim the fat from the water after 30 minutes of cooking the chicken.cook chicken until it's tender. 3. Add sautéed tomato mixture and remaining vegetables to the chicken. 4. Simmer until vegetables are just tender.Add pepper. Check for season(may not need salt) Serve with with a sprinkle of cilantro and a squeeze of lime..
