Abuelita's Pozole de Pollo
3 lbdark meat chicken, skin and bone removed
1 can(s)14.5 ounce can of diced tomatos
1 can(s)15.5 ounce can hominy
1 bunchgreen onion
1 can(s)chile verde or green enchilada sauce

How to Make Abuelita's Pozole de Pollo
- add water and chicken (diced) to a large stock pot and simmer for about 15-20 minutes to make chicken broth.
- Transfer chicken & broth to crock pot and add chopped green onion, chopped pepper, can of tomato and can of chili verde/green enchilada sauce. cook on low for 2 hours
- add hominy and continue cooking for additional 2 hours.
- Serve hot with garnish.
