Ingredients
- 1 tablespoon avocado oil
- 2 - 3 shallots
- 1/2 teaspoon dried minced garlic (1/2 tsp for each clove)
- 1 - 2 - jalapeno peppers
- 1 tablespoon chipotle powder
- 2 teaspoons smoked paprika
- 2 teaspoons coriander, ground
- 1/8 teaspoon allspice, ground
- salt and pepper, to taste
- 1 pound chicken breasts, boneless and skinless
- 6 cups chicken broth, low salt
- 1 can fire roasted diced tomatoes (14.5 oz)
- 2 cups jasmine rice, cooked
- 2 limes, juiced and zested
- 1/4 cup fresh parsley, chopped, plus more for serving
- 1/4 cup fresh mint, chopped, plus more for serving
- 2 avocados, chopped
- optional garnish: Cotija cheese, Feta, parmesan, romano cheese, queso fresco. tortilla chips, pita chips, or veggie chips
How To Make abbene family chipotle chicken & avocado rice soup

Step 1Combine in a slow cooker shallots, dried minced garlic, jalapenos, Chipotle powder, smoked paprika, coriander, allspice, and a pinch of salt and pepper. Stir to combine. Add the chicken, chicken broth, and tomatoes. Season with salt and pepper. Cover and cook on low for 6-7 hours or high for 4-5 hours.

Step 2Shred chicken using two forks. Stir in lime juice, parsley, and mint.

Step 3Portion rice among bowls and cover with soup. Top with avocado, zest, and a squeeze of lime. Enjoy!
