Ingredients
- FOR THE BROTH
- 6 cups beef stock
- 2 inches peeled ginger sliced
- 4 whole star anise
- 5 whole cloves
- 3 cinnamon sticks
- 2 cardamom pods
- 3 tablespoons fish sauce
- 1/4 cup sugar
- BEEF AND MARINADE
- 8 ounces shaved rib eye steak
- 1 tablespoon each grated ginger and minced garlic
- 1 tablespoon sesame oil
- FOR THE SOUP
- 7 ounces dried rice noodles cooked acccording to package directions drained
- 1 cup bean sprouts
- 4 green onions chopped
- fresh cilantro, mint, and basil

Step 1For the broth Mix all ingredients in a pot. Bring to a boil and reduce to a simmer and simmer 30 minutes. Strain the broth into a clean pan and dischard the solids.

Step 2Mix the shaved rib eye with the marinade ingredients and set aside.

Step 3Place the noodles in 4 bowls. Top with the raw rib eye, bean sprouts and green onions. Ladle the hot broth over the meat (this will cook the meat perfectly).

Step 4Top with the herbs. Serve with lime wedges and hoisin sauce if desired.
