vegetable beef soup (leftovers soup)
This is a quick and delicious, throw together in the crock pot dinner! Use whatever left over veggies that you have, along with leftover roast. Add a large jar of V-8 juice, and you’re set! You can also use frozen vegetables, and browned and seasoned stew beef, if you have no leftovers.

Ingredients
- 1 cup cooked green beans
- 1 cup kernel corn
- 1 cup roasted potatoes
- 1 cup roasted carrots
- 1 bottle v-8 juice
How To Make vegetable beef soup (leftovers soup)

Step 1Gather your left over veggies and roast.

Step 2I use cooked green beans.

Step 3Cooked corn.

Step 4Cooked potatoes and carrots.

Step 5Cooked beef roast, shredded.

Step 6Put all of these ingredients into crock pot.

Step 7Pour V-8 juice over ingredients, and stir well.

Step 8Cook on medium to high heat for four hours. (One hour on stove top.)
