This is a quick and delicious, throw together in the crock pot dinner! Use whatever left over veggies that you have, along with leftover roast. Add a large jar of V-8 juice, and you’re set! You can also use frozen vegetables, and browned and seasoned stew beef, if you have no leftovers.

Ingredients

  • 1 cup cooked green beans
  • 1 cup kernel corn
  • 1 cup roasted potatoes
  • 1 cup roasted carrots
  • 1 bottle v-8 juice

How To Make vegetable beef soup (leftovers soup)

  • Step 1
    Gather your left over veggies and roast.
  • Step 2
    I use cooked green beans.
  • Step 3
    Cooked corn.
  • Step 4
    Cooked potatoes and carrots.
  • Step 5
    Cooked beef roast, shredded.
  • Step 6
    Put all of these ingredients into crock pot.
  • Step 7
    Pour V-8 juice over ingredients, and stir well.
  • Step 8
    Cook on medium to high heat for four hours. (One hour on stove top.)
