This is a simple and delicious soup recipe that can be adjusted to suit your taste buds. I am asked often to make this recipe by family and friends. Its also great the next day warmed up as the flavors combine overnight even more.

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 2 cans whole kernal corn; undrained
  • 2 cans pinto beans; undrained
  • 2 cups water
  • 1 can tomato paste
  • 1/3 cup picante sauce
  • 1 package hidden valley ranch salad dressing mix
  • 2 packages taco seasoning mix
  • salt dash to taste
  • pepper dash to taste
  • 1 package tortilla chips
  • 1 cup shredded cheddar cheese

How To Make taco soup for a crowd

  • Step 1
    In a stock pot or Dutch oven, brown ground beef with onions, bell pepper, salt and pepper until meat is no longer pink; drain grease. Add corn, pinto beans, dressing mix, tomato paste, taso seasoning, picante sauce and water; mix well. Simmer 1 hour. Serve in bowls with crushed tortilla chips and cheese on top.
