This is a simple and delicious soup recipe that can be adjusted to suit your taste buds. I am asked often to make this recipe by family and friends. Its also great the next day warmed up as the flavors combine overnight even more.

Ingredients

  • 1 lb
    ground beef
  • 1 small
    onion, chopped
  • 1 small
    bell pepper, chopped
  • 2 can(s)
    whole kernal corn; undrained
  • 2 can(s)
    pinto beans; undrained
  • 2 c
    water
  • 1 can(s)
    tomato paste
  • 1/3 c
    picante sauce
  • 1 pkg
    hidden valley ranch salad dressing mix
  • 2 pkg
    taco seasoning mix
  • salt dash(es)
    to taste
  • pepper dash(es)
    to taste
  • 1 pkg
    tortilla chips
  • 1 c
    shredded cheddar cheese

How to Make Taco Soup For A Crowd

Step-by-Step

  1. In a stock pot or Dutch oven, brown ground beef with onions, bell pepper, salt and pepper until meat is no longer pink; drain grease. Add corn, pinto beans, dressing mix, tomato paste, taso seasoning, picante sauce and water; mix well. Simmer 1 hour. Serve in bowls with crushed tortilla chips and cheese on top.
