A lot of people have different versions of this. But this is a version I came up with. This makes a large amount, but it does freeze well. Hope you enjoy it.

Ingredients

  • 2 cloves garlic, minced
  • 1 large red onion, chopped
  • 1 large green pepper, chopped
  • 2 pounds ground beef or turkey
  • 1/2 to 1 tablespoons ground cumin
  • 2 packages mild taco seasoning mix (you can use the low sodium kind)
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 2 cans diced tomatoes. or one can of diced and one can of rotel if you want it spicer.
  • 2 cans of whole kernel corn, or one bag frozen
  • 2 cans black beans, drained
  • - sour cream (optional)
  • - cheddar cheese, sliced green onions (optional)
  • 1 pint tomato juice

How To Make taco soup

  • Step 1
    Add ground beef or turkey and cook until browned, drain
  • Step 2
    Add the garlic, onions and green peppers. cook for 4-5 minutes, or until softened
  • Step 3
    Add the packages of taco seasoning and the cumin and cayenne pepper
  • Step 4
    Add the canned tomatoes, corn, black beans and tomato juice
  • Step 5
    Turn down the heat to low, cover and simmer for 20-30 minutes to blend all the flavors
  • Step 6
    If wanted, add the optional cheese, sour cream and green onions on top
