taco soup
A lot of people have different versions of this. But this is a version I came up with. This makes a large amount, but it does freeze well. Hope you enjoy it.

Ingredients
- 2 cloves garlic, minced
- 1 large red onion, chopped
- 1 large green pepper, chopped
- 2 pounds ground beef or turkey
- 1/2 to 1 tablespoons ground cumin
- 2 packages mild taco seasoning mix (you can use the low sodium kind)
- 1/4 teaspoon cayenne pepper (or to taste)
- 2 cans diced tomatoes. or one can of diced and one can of rotel if you want it spicer.
- 2 cans of whole kernel corn, or one bag frozen
- 2 cans black beans, drained
- - sour cream (optional)
- - cheddar cheese, sliced green onions (optional)
- 1 pint tomato juice
How To Make taco soup

Step 1Add ground beef or turkey and cook until browned, drain

Step 2Add the garlic, onions and green peppers. cook for 4-5 minutes, or until softened

Step 3Add the packages of taco seasoning and the cumin and cayenne pepper

Step 4Add the canned tomatoes, corn, black beans and tomato juice

Step 5Turn down the heat to low, cover and simmer for 20-30 minutes to blend all the flavors

Step 6If wanted, add the optional cheese, sour cream and green onions on top
