Taco Soup

A lot of people have different versions of this. But this is a version I came up with. This makes a large amount, but it does freeze well. Hope you enjoy it.

  • 2 clove
    garlic, minced
  • 1 large
    red onion, chopped
  • 1 large
    green pepper, chopped
  • 2 lb
    ground beef or turkey
  • 1/2 to 1 Tbsp
    ground cumin
  • 2 pkg
    mild taco seasoning mix (you can use the low sodium kind)
  • 1/4 tsp
    cayenne pepper (or to taste)
  • 2 can(s)
    diced tomatoes. or one can of diced and one can of rotel if you want it spicer.
  • 2 can(s)
    of whole kernel corn, or one bag frozen
  • 2 can(s)
    black beans, drained
  • ·
    sour cream (optional)
  • ·
    cheddar cheese, sliced green onions (optional)
  • 1 pt
    tomato juice

How to Make Taco Soup


  1. Add ground beef or turkey and cook until browned, drain
  2. Add the garlic, onions and green peppers. cook for 4-5 minutes, or until softened
  3. Add the packages of taco seasoning and the cumin and cayenne pepper
  4. Add the canned tomatoes, corn, black beans and tomato juice
  5. Turn down the heat to low, cover and simmer for 20-30 minutes to blend all the flavors
  6. If wanted, add the optional cheese, sour cream and green onions on top
