A lot of people have different versions of this. But this is a version I came up with. This makes a large amount, but it does freeze well. Hope you enjoy it.

2 clove
garlic, minced
1 large
red onion, chopped
1 large
green pepper, chopped
2 lb
ground beef or turkey
1/2 to 1 Tbsp
ground cumin
2 pkg
mild taco seasoning mix (you can use the low sodium kind)
1/4 tsp
cayenne pepper (or to taste)
2 can(s)
diced tomatoes. or one can of diced and one can of rotel if you want it spicer.
2 can(s)
of whole kernel corn, or one bag frozen
2 can(s)
black beans, drained
sour cream (optional)
cheddar cheese, sliced green onions (optional)
1 pt
tomato juice

How to Make Taco Soup


  • 1Add ground beef or turkey and cook until browned, drain
  • 2Add the garlic, onions and green peppers. cook for 4-5 minutes, or until softened
  • 3Add the packages of taco seasoning and the cumin and cayenne pepper
  • 4Add the canned tomatoes, corn, black beans and tomato juice
  • 5Turn down the heat to low, cover and simmer for 20-30 minutes to blend all the flavors
  • 6If wanted, add the optional cheese, sour cream and green onions on top
