Taco Soup

A lot of people have different versions of this. But this is a version I came up with. This makes a large amount, but it does freeze well. Hope you enjoy it.
Ingredients

2 clovegarlic, minced
-
1 largered onion, chopped

1 largegreen pepper, chopped

2 lbground beef or turkey

1/2 to 1 Tbspground cumin

2 pkgmild taco seasoning mix (you can use the low sodium kind)

1/4 tspcayenne pepper (or to taste)

2 can(s)diced tomatoes. or one can of diced and one can of rotel if you want it spicer.

2 can(s)of whole kernel corn, or one bag frozen

2 can(s)black beans, drained
-
·sour cream (optional)
-
·cheddar cheese, sliced green onions (optional)

1 pttomato juice
How to Make Taco Soup
- Add ground beef or turkey and cook until browned, drain
- Add the garlic, onions and green peppers. cook for 4-5 minutes, or until softened
- Add the packages of taco seasoning and the cumin and cayenne pepper
- Add the canned tomatoes, corn, black beans and tomato juice
- Turn down the heat to low, cover and simmer for 20-30 minutes to blend all the flavors
- If wanted, add the optional cheese, sour cream and green onions on top
