Ingredients

  • 2 pounds hamburger meat
  • 2 cups diced onions
  • 1 can 15 1/4 oz whole kernal corn
  • 2 cans 14 1/2 oz diced tomatoes
  • 1 can rotel tomatoes
  • 2 cans 4 1/2 oz green chiles
  • 2 cans 4 1/2 oz sliced, black olives
  • 1/2 cup sliced green olives optional
  • 2 packages taco seasoning mix
  • 1 package 1 oz ranch dressing mix
  • - fritos for serving
  • - sour cream for garnish
  • - grated cheese for garnish
  • - chopped green onions for garnish

How To Make taco soup

  • Step 1
    Brown hamburger meat and onions in a large skillet, drain. Then transfer meat and onions to a large crockpot. Add corn, tomatoes, green chiles, black olives, green olives, taco seasoning and ranch dressing mix and cook on low for 6 to 8 hours or you can cook on stove on low for an hour or so. To serve, put corn chips in a bowl and ladle soup over them...add desired amount of shredded cheddar cheese and sour cream. If you wish, you can top with green onions.
