taco soup
I reviewed several recipes and took some from this one or that one to come up with my own version (that didn't make a huge batch). My husband is a picky eater and I wanted to come up with a recipe to take us away from the same old meals. He liked it and said I could make it again. I am planning on trying it with chicken.

Ingredients
- 1 pound lean ground beef/or more for a meatier soup
- 1 small diced onion
- 1 small can corn/with juice
- 1 can pinto beans, slightly drained
- 1 can diced tomatoes
- 2 tablespoons taco seasoning
- 3/4 cup water
- 1/2 package ranch dressing mix
- 1 package sazon goya mexican seasoning
- 3 small corn tortillas
- 1 cup shredded cheddar cheese
How To Make taco soup

Step 1Brown ground beef and onion. Drain

Step 2Add undrained corn and tomatoes, partially drained pinto beans, water and seasonings. Sazon Goya seasoning packets can be found in the Mexican foods aisle. Simmer while preparing toppings.

Step 3Cut tortillas into small strips and lightly spray with oil. I added garlic salt seasoning and toasted in a 350 degree oven.

Step 4Ladle soup into bowls and top with cheddar cheese and tortilla strips. You can also top with salsa, chopped tomatoes, green pepper, jalapenos, sour cream. Whatever you like.
