The first time I ate this soup was at a potluck when I was working in SICU at North Monroe Hospital. One of my favorite soups.

Ingredients

  • 1 pound ground beef
  • 1 - onion, chopped
  • 1 can cream of corn
  • 1 can corn niblets, drained
  • 1 can rotel tomatoes, undrained
  • 2 cans ranch style beans, undrained
  • 3/4 cup water
  • 1 package hidden valley buttermilk dressing mix
  • 1 package taco seasoning mix
  • 8 ounces cheddar cheese, grated

How To Make taco soup

  • Step 1
    Brown the ground meat with the onion. Drain.
  • Step 2
    Add the taco seasoning and the ranch dressing mix. Mix well.
  • Step 3
    Add the water, beans, corn, and tomatoes. Mix well.
  • Step 4
    Simmer over low heat until bubbly (or place in crock pot).
  • Step 5
    Serve over tortilla chips and top with cheddar cheese.
