swedish meat ball soup

This is a very good soup , I enjoy it on a cold evening with a thick piece of garlic french bread.

Ingredients

  • 1 - egg
  • 2 cups half and half
  • 1 cup soft bread crumbs
  • 1 small onion ; chopped
  • 1 3/4 teaspoons salt ; divided
  • 1 1/2 pounds ground beef
  • 1 tablespoon butter
  • 3 tablespoons flour
  • 3/4 teaspoon beef bouillon granules
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic salt
  • 3 cups water
  • 1 pound red potatoes ; cubed
  • 1 package frozen pea's ; thawed

How To Make swedish meat ball soup

  • Step 1
    In a small bowl beat egg and add 1/3 cup cream , bread crumbs , onion and 1 teas. of salt. Add beef and mix well , shape into 1/2" meatballs.
  • Step 2
    In a dutch oven or a soup kettle ; brown the meat balls in the butter. Remove from the pan and set aside.
  • Step 3
    Drain off most of the fat from the kettle and add : flour , bouillon , pepper and garlic salt ; stir until smooth.
  • Step 4
    Gradually stir in the water and bring to a boil ; stirring often.
  • Step 5
    Add potatoes and meatballs and reduce the heat ; Cover and simmer for 25 minutes , or until the potatoes are tender , stir in the pea's and the remaining cream , heat through.
