Swedish Meat Ball Soup

This is a very good soup , I enjoy it on a cold evening with a thick piece of garlic french bread.

    half and half
  • 1 c
    soft bread crumbs
  • 1 small
    onion ; chopped
  • 1 3/4 tsp
    salt ; divided
  • 1 1/2 lb
    ground beef
  • 1 Tbsp
  • 3 Tbsp
  • 3/4 tsp
    beef bouillon granules
  • 1/2 tsp
  • 1/4 tsp
    garlic salt
  • 3 c
  • 1 lb
    red potatoes ; cubed
  • 1 pkg
    frozen pea's ; thawed

How to Make Swedish Meat Ball Soup


  1. In a small bowl beat egg and add 1/3 cup cream , bread crumbs , onion and 1 teas. of salt.
    Add beef and mix well , shape into 1/2" meatballs.
  2. In a dutch oven or a soup kettle ; brown the meat balls in the butter.
    Remove from the pan and set aside.
  3. Drain off most of the fat from the kettle and add : flour , bouillon , pepper and garlic salt ; stir until smooth.
  4. Gradually stir in the water and bring to a boil ; stirring often.
  5. Add potatoes and meatballs and reduce the heat ;
    Cover and simmer for 25 minutes , or until the potatoes are tender , stir in the pea's and the remaining cream , heat through.
