This is a very good soup , I enjoy it on a cold evening with a thick piece of garlic french bread.

soft bread crumbs
1 small
onion ; chopped
1 3/4 tsp
salt ; divided
1 1/2 lb
ground beef
1 Tbsp
3 Tbsp
3/4 tsp
beef bouillon granules
1/2 tsp
1/4 tsp
garlic salt
3 c
1 lb
red potatoes ; cubed
1 pkg
frozen pea's ; thawed

How to Make Swedish Meat Ball Soup


  • 1In a small bowl beat egg and add 1/3 cup cream , bread crumbs , onion and 1 teas. of salt.
    Add beef and mix well , shape into 1/2" meatballs.
  • 2In a dutch oven or a soup kettle ; brown the meat balls in the butter.
    Remove from the pan and set aside.
  • 3Drain off most of the fat from the kettle and add : flour , bouillon , pepper and garlic salt ; stir until smooth.
  • 4Gradually stir in the water and bring to a boil ; stirring often.
  • 5Add potatoes and meatballs and reduce the heat ;
    Cover and simmer for 25 minutes , or until the potatoes are tender , stir in the pea's and the remaining cream , heat through.
