I love this soup it is always better the next day I add different colored peppers to this, if you like it with a kick add a few chopped Jalapeno's.. And I put a twist on this also and add Italian sausage

Ingredients

ground beef

peppers one green , one yellow, one red
1 large
can tomato sauce
1 large
can whole or diced tomatos with juice

beef bouillon cubes
1/2 c
brown sugar
2 tsp
salt
3 tsp
black pepper
2 Tbsp
soy sauce
3-4 c
white rice

How to Make Stuffed pepper soup

Step-by-Step

  • 1In a Skillet add beef and browm over med high heat, drain off fat.
  • 2Add peppers and beef in a big soup pot and saute over med heat for 7 minutes.
  • 3Stir in remaining ingrediants, salt, pepper, tomatoes including juice, bouiollon, brown sugar everything except rice,Cover and cook on low for 45 minutes.
  • 4add rice and simmer for 15 minutes.
  • 5OPTIONAL...
    For a twist I sometimes use 1 lb of groud beef and 1 lb Italian sausage, and a bit of basil and orageno..
