- 1 teaspoon olive oil
- 1 pound lean ground beef
- 1 teaspoon dried italian seasoning
- 1 medium onion, cut into 1/2 in pieces
- 2 large green bell peppers cut into 1/2 in pieces
- 2 cloves garlic- 2 tsp minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3/4 cup long grain white rice uncooked
- 4 cups beef broth
- 28 ounces tomato puree
- 10 ounces diced tomatoes
- 2 tablespoons worcestershire sauce
- 1-1/2 cup pepper jack cheese grated
- 1/4 cup parsley - fresh or dried

Step 1Heat the olive oil in a large dutch oven overbith Italian seasoning and cook. Breaking up the beef into smaller pieces until brown, 4-6 minutes. Drain any grease

Step 2Add the onion and bell peppers and cook, stirring, until they start to softenm 4-6 minutes. Stir in the garlic, salt and pepper and cook for 30 seconds.

Step 3Stir in the rice, then add the broth, tomatoe puree and diced tomatoes. Stir well to combine all ingredients.

Step 4Bring the soup to a simmer, then reduce the heat to low and cover and cook until the rice is tender, about 25 minutes. Stir in Worcestershire sauce. Ladle into bowls and top with cheese and parsley.
