stuffed green pepper soup

My husband wouldn't eat stuffed green peppers, but he did try this soup at one of our favorite restaurants. He really liked it, so I went looking for recipes. I combined a couple and this is the result. Yummy!

Ingredients For stuffed green pepper soup

  • 2 lb
    ground chuck
  • 6 c
    water
  • 28 oz
    tomato sauce
  • 28 oz
    diced tomatoes, undrained
  • 2 c
    chopped green peppers
  • 1 c
    chopped onion
  • 1/4 c
    brown sugar
  • 1 Tbsp
    salt
  • 2 tsp
    pepper
  • 1 Tbsp
    better than boullion beef base
  • 2 c
    cooked long grain rice
  • cholula hot sauce to taste

How To Make stuffed green pepper soup

    In a large pot cook beef over medium-high heat until browned. Drain

    Stir in next nine ingredients; bring to a boil.

    Reduce heat; simmer, uncovered, until peppers and onions are tender, about 60 minutes.

    Add cooked rice; simmer, uncovered, 10 minutes longer.
  • 5
    Optional - Cholula Hot Sauce adds a nice flavor component without adding too much heat.
