stuffed green pepper soup
My husband wouldn't eat stuffed green peppers, but he did try this soup at one of our favorite restaurants. He really liked it, so I went looking for recipes. I combined a couple and this is the result. Yummy!

Ingredients
- 2 pounds ground chuck
- 6 cups water
- 28 ounces tomato sauce
- 28 ounces diced tomatoes, undrained
- 2 cups chopped green peppers
- 1 cup chopped onion
- 1/4 cup brown sugar
- 1 tablespoon salt
- 2 teaspoons pepper
- 1 tablespoon better than boullion beef base
- 2 cups cooked long grain rice
- cholula hot sauce to taste

Step 1In a large pot cook beef over medium-high heat until browned. Drain

Step 2Stir in next nine ingredients; bring to a boil.

Step 3Reduce heat; simmer, uncovered, until peppers and onions are tender, about 60 minutes.

Step 4Add cooked rice; simmer, uncovered, 10 minutes longer.

Step 5Optional - Cholula Hot Sauce adds a nice flavor component without adding too much heat.
