We dediced to do soup and sandwiches one year after my grandmother got up in years and we didn't want her cooking so much for holidays. My cousin brought this soup and I really liked it. It's a good change from chili or chicken noodle. It's loaded with flavor but also light on your stomach.

Ingredients

  • 1 pound bulk pork sausage, hot
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 4 cans great northern beans, undrained
  • 2 cans (14.5 oz). ready-to-use chicken broth
  • 1 can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper

How To Make spicy sausage & bean soup

  • Step 1
    In a large soup pot, cook the sausage, onion & garlic in oil for 5-6 minutes till no longer pink, stirring frequently to break up the meat.
  • Step 2
    Add the remaining ingredients and bring to a boil. Reduce to medium-low and simmer uncovered 30 minutes.
  • Step 3
    I like this soup spicy, if you prefer mild sausage or even turkey sausage, experiment & make it yours.
