southwestern soup
My kids love this easy yet delicous soup. You can follow the recipe as is or throw in any leftover beans you have on hand. I had some leftover tomato juice and went ahead and put it in the soup too.

Ingredients
- l pound ground beef or turkey
- 1 cup onion, diced
- 2 cloves garlic, minced or 1 tsp garlic powder
- 2 cans kidney beans, rinsed & drained
- 1 can black beans, rinsed & drained
- 1 can diced tomatoes
- 1 can diced tomatoes & green chillies
- 4 cups beef broth
- 2 cups frozen corn or 1 can corn, drained
- 1 package taco seasoning (i used homemade)
How To Make southwestern soup

Step 1Brown the beef, onion & garlic.

Step 2Add remaining ingredients.

Step 3Cover & simmer for 30 minutes.

Step 4Add salt & pepper if needed.

Step 5Serve with sour cream & cheddar cheese.
