Ingredients
- 3/4 pound ground beef
- 3/4 pound ground pork
- 1/3 cup long grain rice
- 1 - egg, slightly beaten
- 1 teaspoon dried oregano
- - salt and pepper to taste
- 1 medium onion, minced
- 1 - garlic clove, crushed
- 2 tablespoons salad oil
- 1/2 cup tomato paste
- 10 cups beef broth
- 1/2 cup coriander, fresh and minced
How To Make southwestern meatball soup

Step 1Combine beef, pork, rice, egg, oregano, 1 teaspoon salt and 1/4 teaspoon pepper (or to taste) in a large bowl.

Step 2Shape into small balls, about the size of golf balls.

Step 3Saute onion and garlic in heated oil in a large kettle until tender.

Step 4Mix in tomato paste.

Step 5Add broth; season with salt and pepper.

Step 6Bring to a boil.

Step 7Add meatballs and reduce heat.

Step 8Cook slowly, covered, about 30 minutes, until meatballs are cooked.

Step 9Stir in coriander or parsley.
