  • 3/4 lb
    ground beef
  • 3/4 lb
    ground pork
  • 1/3 c
    long grain rice
  • 1
    egg, slightly beaten
  • 1 tsp
    dried oregano
  • ·
    salt and pepper to taste
  • 1 medium
    onion, minced
  • 1
    garlic clove, crushed
  • 2 Tbsp
    salad oil
  • 1/2 c
    tomato paste
  • 10 c
    beef broth
  • 1/2 c
    coriander, fresh and minced

How to Make Southwestern Meatball Soup


  1. Combine beef, pork, rice, egg, oregano, 1 teaspoon salt and 1/4 teaspoon pepper (or to taste) in a large bowl.
  2. Shape into small balls, about the size of golf balls.
  3. Saute onion and garlic in heated oil in a large kettle until tender.
  4. Mix in tomato paste.
  5. Add broth; season with salt and pepper.
  6. Bring to a boil.
  7. Add meatballs and reduce heat.
  8. Cook slowly, covered, about 30 minutes, until meatballs are cooked.
  9. Stir in coriander or parsley.
