ground pork
1/3 c
long grain rice
egg, slightly beaten
1 tsp
dried oregano
salt and pepper to taste
1 medium
onion, minced
garlic clove, crushed
2 Tbsp
salad oil
1/2 c
tomato paste
10 c
beef broth
1/2 c
coriander, fresh and minced

How to Make Southwestern Meatball Soup


  • 1Combine beef, pork, rice, egg, oregano, 1 teaspoon salt and 1/4 teaspoon pepper (or to taste) in a large bowl.
  • 2Shape into small balls, about the size of golf balls.
  • 3Saute onion and garlic in heated oil in a large kettle until tender.
  • 4Mix in tomato paste.
  • 5Add broth; season with salt and pepper.
  • 6Bring to a boil.
  • 7Add meatballs and reduce heat.
  • 8Cook slowly, covered, about 30 minutes, until meatballs are cooked.
  • 9Stir in coriander or parsley.
