Very easy to make ahead and cook overnight or make in the a.m. for supper that night. My entire family loves it. It's great to take to a potluck soup supper, too.

Ingredients
- 1 1/2 pounds beef chuck roast, cut into 1 inch cubes) or can use stew meat
- 1 1/2 pounds potatoes cut into bite sized pieces
- 6 medium carrots, cut into bite sized pieces
- 3 - stalks celery, cut into bite sized pieces
- 1 - onion, cut into bite sized pieces
- 3 tablespoons flour
- 1 - can beef broth
- 1 - can (14 1/2 oz.) diced tomatoes
- 3 tablespoons canola oil
- 1 teaspoon dry mustard
- 1/2 teaspoon dried thyme
- 1 teaspoon diced garlic
- 1 teaspoon browning sauce if desired
How To Make slow cooker beef stew

Step 1Place meat in zip lock bag with flour. Seal and toss well to coat. Brown in oil. Layer ingredients in crockpot in this order: meat, carrots, potatoes, celery, onion, beef broth, tomatoes, garlic, thyme, mustard. Cook on high for 2-3 hours, then turn on low for about 4-5 hours or until tender. You can stir to mix ingredients after the first couple of hours.
