Very easy to make ahead and cook overnight or make in the a.m. for supper that night. My entire family loves it. It's great to take to a potluck soup supper, too.

Ingredients

  • 1 1/2 pounds beef chuck roast, cut into 1 inch cubes) or can use stew meat
  • 1 1/2 pounds potatoes cut into bite sized pieces
  • 6 medium carrots, cut into bite sized pieces
  • 3 - stalks celery, cut into bite sized pieces
  • 1 - onion, cut into bite sized pieces
  • 3 tablespoons flour
  • 1 - can beef broth
  • 1 - can (14 1/2 oz.) diced tomatoes
  • 3 tablespoons canola oil
  • 1 teaspoon dry mustard
  • 1/2 teaspoon dried thyme
  • 1 teaspoon diced garlic
  • 1 teaspoon browning sauce if desired

How To Make slow cooker beef stew

  • Step 1
    Place meat in zip lock bag with flour. Seal and toss well to coat. Brown in oil. Layer ingredients in crockpot in this order: meat, carrots, potatoes, celery, onion, beef broth, tomatoes, garlic, thyme, mustard. Cook on high for 2-3 hours, then turn on low for about 4-5 hours or until tender. You can stir to mix ingredients after the first couple of hours.
