This is a really yummy soup. Great on cold evenings. Very simple to make. Serve hot with crusty bread.

Ingredients

  • 2 pounds beef stew cubes
  • 1/4 cup vegetable or canola oil
  • 3 - carrots, peeled and sliced
  • 5 - potatoes, peeled and cut into bite-size pieces
  • 3 stalks celery, diced
  • 1 medium onion, diced
  • 4 cans (13.5 oz) beef broth
  • 1/4 cup fresh chopped parsley
  • - salt & pepper to taste
  • 1/2 cup quick cook barley

How To Make slow cooker beef and barley soup

  • Step 1
    Heat in oil in large skillet. Add beef and onion and cook until meat is browned and onions are tender.
  • Step 2
    add a can of beef broth and cook for a minute or two until smooth.
  • Step 3
    Pour beef and onion mixture into slow cooker. Add vegetables and remaining broth.
  • Step 4
    Cook on high for 4 hours. Add quick cooking barley 10 minutes before done. (If using regular barley, add at the beginning of cooking)
  • Step 5
    Add salt and pepper to taste.
  • Step 6
    Ladle hot soup into bowls and garnish with fresh parsley.
