This is a really yummy soup. Great on cold evenings. Very simple to make. Serve hot with crusty bread.

Ingredients
- 2 pounds beef stew cubes
- 1/4 cup vegetable or canola oil
- 3 - carrots, peeled and sliced
- 5 - potatoes, peeled and cut into bite-size pieces
- 3 stalks celery, diced
- 1 medium onion, diced
- 4 cans (13.5 oz) beef broth
- 1/4 cup fresh chopped parsley
- - salt & pepper to taste
- 1/2 cup quick cook barley
How To Make slow cooker beef and barley soup

Step 1Heat in oil in large skillet. Add beef and onion and cook until meat is browned and onions are tender.

Step 2add a can of beef broth and cook for a minute or two until smooth.

Step 3Pour beef and onion mixture into slow cooker. Add vegetables and remaining broth.

Step 4Cook on high for 4 hours. Add quick cooking barley 10 minutes before done. (If using regular barley, add at the beginning of cooking)

Step 5Add salt and pepper to taste.

Step 6Ladle hot soup into bowls and garnish with fresh parsley.
