Ingredients

  • 1 pound sauerkraut
  • 6 cups beef stock
  • 2 large onions, chopped
  • 3 slices bacon
  • 1 teaspoon paprika
  • 1 tablespoon tomato paste
  • 1/2 teaspoon caraway seeds
  • - salt
  • 2 - potatoes, peeled, grated and soaked
  • 1/4 pound lean ham, diced
  • 2 - beef frankfurters, sliced

How To Make sauerkraut soup

  • Step 1
    Simmer sauerkraut with 3 cups of stock for 30 minutes.
  • Step 2
    Saute onions with bacon until golden.
  • Step 3
    Add paprika, remaining stock, tomato paste, caraway seeds and salt to taste.
  • Step 4
    Add sauerkraut, stock and drained potatoes, and simmer for 30 minutes.
  • Step 5
    Add more stock if necessary to make 6 cups.
  • Step 6
    Add the meats and cook long enough to heat through (about 10 minutes).
