beef stock
2 large
onions, chopped
3 slice
1 tsp
1 Tbsp
tomato paste
1/2 tsp
caraway seeds
potatoes, peeled, grated and soaked
1/4 lb
lean ham, diced
beef frankfurters, sliced

How to Make Sauerkraut Soup


  • 1Simmer sauerkraut with 3 cups of stock for 30 minutes.
  • 2Saute onions with bacon until golden.
  • 3Add paprika, remaining stock, tomato paste, caraway seeds and salt to taste.
  • 4Add sauerkraut, stock and drained potatoes, and simmer for 30 minutes.
  • 5Add more stock if necessary to make 6 cups.
  • 6Add the meats and cook long enough to heat through (about 10 minutes).
