Ingredients
- 1 pound sauerkraut
- 6 cups beef stock
- 2 large onions, chopped
- 3 slices bacon
- 1 teaspoon paprika
- 1 tablespoon tomato paste
- 1/2 teaspoon caraway seeds
- - salt
- 2 - potatoes, peeled, grated and soaked
- 1/4 pound lean ham, diced
- 2 - beef frankfurters, sliced
How To Make sauerkraut soup

Step 1Simmer sauerkraut with 3 cups of stock for 30 minutes.

Step 2Saute onions with bacon until golden.

Step 3Add paprika, remaining stock, tomato paste, caraway seeds and salt to taste.

Step 4Add sauerkraut, stock and drained potatoes, and simmer for 30 minutes.

Step 5Add more stock if necessary to make 6 cups.

Step 6Add the meats and cook long enough to heat through (about 10 minutes).
