this is my tweaked out menudo, I've been making it this way for about 20yrs, and my family and friends like it this way, sometimes I do add a couple pounds of pork to it also.
This makes a lot of soup.

5 lb
beef honeycomb tripe
5 lb
beef stew meat
3 or 4
beef shanks
1 large
onion, diced
5 or 6 clove
garlic , minced
3 Tbsp
3 Tbsp
oregano, dried
3 Tbsp
chili powder
3 or 4
bay leaves dried
1 or 2 tsp
cayenne pepper
1 tsp
adobo powder
2 pkg
sazon seasoning
1/2 c
salt & pepper to taste
2 handfuls chopped cilantro
juice from 2 lemons
huge can hominy

How to Make Sandys Menudo


  • 1wash tripe and feet, cut tripe into bite size pieces.
  • 2put tripe ,feet, and all meat in a very large pot, cover with water, and put to simmer, add everything but the lemon juice and the hominy.
    (you can add 1 or 2 tsp of red pepper flakes if you like)
  • 3Simmer for a few hours till meat is very tender, remove meat and feet and bones with a slotted spoon.cut meat into bite sized pieces and return to pot.
  • 4add hominy and lemon juice and cook about an hour longer.
  • 5serve with lemon wedges, jalapenos,or red pepper flakes, diced onion and cilantro with lots and lots of corn tortillas
