this is my tweaked out menudo, I've been making it this way for about 20yrs, and my family and friends like it this way, sometimes I do add a couple pounds of pork to it also. This makes a lot of soup.

Ingredients

  • 1 - cows foot
  • 2 - pigs feet
  • 5 pounds beef honeycomb tripe
  • 5 pounds beef stew meat
  • 3 or 4 - beef shanks
  • 1 large onion, diced
  • 5 or 6 cloves garlic , minced
  • 3 tablespoons cumin
  • 3 tablespoons oregano, dried
  • 3 tablespoons chili powder
  • 3 or 4 - bay leaves dried
  • 1 or 2 teaspoons cayenne pepper
  • 1 teaspoon adobo powder
  • 2 packages sazon seasoning
  • 1/2 cup sofrito
  • - salt & pepper to taste
  • - 2 handfuls chopped cilantro
  • - juice from 2 lemons
  • 1 - huge can hominy
  • - water

How To Make sandys menudo

  • Step 1
    wash tripe and feet, cut tripe into bite size pieces.
  • Step 2
    put tripe ,feet, and all meat in a very large pot, cover with water, and put to simmer, add everything but the lemon juice and the hominy. (you can add 1 or 2 tsp of red pepper flakes if you like)
  • Step 3
    Simmer for a few hours till meat is very tender, remove meat and feet and bones with a slotted spoon.cut meat into bite sized pieces and return to pot.
  • Step 4
    add hominy and lemon juice and cook about an hour longer.
  • Step 5
    serve with lemon wedges, jalapenos,or red pepper flakes, diced onion and cilantro with lots and lots of corn tortillas
