    each..chopped carrot,celery,onion
  • 1 Tbsp
    butter
  • 4 c
    beef broth
  • 4 c
    water
  • 2 c
    chopped cooked roast beef
  • 1 can(s)
    (14-1/2 oz)diced tomatoes(undrained)
  • 1 c
    quick cooking barley
  • 1-1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    dried basil
  • 1/2 tsp
    dried oregano
  • 1/2 c
    frozen peas

How to Make Roast Beef Barley Soup

Step-by-Step

  1. In a soup kettle or dutch oven,saute carrot,celery,onion in butter until tender,about 5 min.
    Add next 9 ingredients,bring to a boil.Reduce heat;cover & simmer 20 min.,stirring occasionally.
    Add peas. simmer,uncovered,5 min.
