This is delicious and fun to have everyone make their own. Give them the hot broth and let them pick their own ingredients. If the broth is very hot, it will cook the beef. Make sure you slice it very thin. Parboil the rice noodles.

Ingredients

  • FOR THE BROTH
  • 2 quarts chicken stock
  • 2 sheets dried kombu
  • SESAME MISO DIPPING SAUCE
  • 1/2 cup sesame seeds
  • 1/2 cup white miso
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon rice vinegar
  • 3 cloves garlic, minced
  • 1 cup water
  • 1 tablespoon toasted sesame oil
  • SPICY FISH SAUCE AND LIME DIP
  • 1/4 cup fish sauce
  • 1/4 cup lime juice
  • 2 tablespoons sugar
  • 1 tablespoon chili crisp
  • HOT POT
  • 1 pound rib eye beef, sliced very thin
  • 1 bunch spinach, stems trimmed
  • 8 ounces mushrooms, sliced
  • 1/4 head napa cabbage, chopped
  • 4 scallions, sliced wide
  • 2 tablespoons dried gogi berries
  • 2 teaspoons red dates
  • 8 ounces parboiled rice noodles
  • 1 cup fresh cilantro

How To Make rib eye hot pot with 2 dipping sauces

  • Step 1
    For the broth, place a large pot on the stove, but do not turn on the heat. Add the kombu and let it sit for 30 minutes.
  • Step 2
    While waiting, make the two sauces by mixing all ingredients for each sauce and set aside.
  • Step 3
    After 30 minutes, remove the kombu and discard. Bring the stock to a boil and reduce to a simmer, and simmer for 30 minutes.
  • Step 4
    Cut all your hot pot ingredients. Once the stock is cooked, ladle it into bowls and add your ingredients. Make sure the stock is very hot, and it will cook the ingredients. Of course, you can always just put all the ingredients in the stock and then ladle it into the bowls. Serve with both dipping sauces. You can pour some of the dipping sauces in your bowl or dip the spoon into each one. However, you like.
