I love soup. I love Reubens now I can have both together.

Ingredients

  • 2 tablespoons butter
  • 1 medium onion diced
  • 6 cloves garlic minced
  • - salt and pepper to taste
  • 2 tablespoons butter melted
  • 1/4 cup flour
  • 32 ounces chicken stock
  • 2 cups half and half
  • 1/2 cup thousand island or russian dressing
  • 1 1/2 cups sauerkraut drained
  • 12 ounces deli corned beef chopped
  • 2 cups shredded swiss cheese

How To Make reuben soup

  • Step 1
    Add the butter to a large stock pot. Melt the butter and add the onion, and garlic. Saute 5 minutes. Reduce heat to med low. In a small bowl place the melted butter and add flour and 1/4 cup chicken stock. Mix well. Add the flour mixture to the pot and cook 2 minutes. Add the rest of the chicken stock and cook 2 minutes.
  • Step 2
    Stir in the half and half, thousand island dressing, sauerkraut, and corned beef. Let simmer for 10 minutes. Add the Swiss cheese and stir until cheese is melted.
  • Step 3
    Remove from heat and serve
