Ingredients
- 2 tablespoons butter
- 1 medium onion diced
- 6 cloves garlic minced
- - salt and pepper to taste
- 2 tablespoons butter melted
- 1/4 cup flour
- 32 ounces chicken stock
- 2 cups half and half
- 1/2 cup thousand island or russian dressing
- 1 1/2 cups sauerkraut drained
- 12 ounces deli corned beef chopped
- 2 cups shredded swiss cheese
How To Make reuben soup

Step 1Add the butter to a large stock pot. Melt the butter and add the onion, and garlic. Saute 5 minutes. Reduce heat to med low. In a small bowl place the melted butter and add flour and 1/4 cup chicken stock. Mix well. Add the flour mixture to the pot and cook 2 minutes. Add the rest of the chicken stock and cook 2 minutes.

Step 2Stir in the half and half, thousand island dressing, sauerkraut, and corned beef. Let simmer for 10 minutes. Add the Swiss cheese and stir until cheese is melted.

Step 3Remove from heat and serve
