  • 2 Tbsp
  • 1 medium
    onion diced
  • 6 clove
    garlic minced
  • ·
    salt and pepper to taste
  • 2 Tbsp
    butter melted
  • 1/4 c
  • 32 oz
    chicken stock
  • 2 c
    half and half
  • 1/2 c
    thousand island or russian dressing
  • 1 1/2 c
    sauerkraut drained
  • 12 oz
    deli corned beef chopped
  • 2 c
    shredded swiss cheese

How to Make Reuben Soup


  1. Add the butter to a large stock pot. Melt the butter and add the onion, and garlic. Saute 5 minutes. Reduce heat to med low. In a small bowl place the melted butter and add flour and 1/4 cup chicken stock. Mix well. Add the flour mixture to the pot and cook 2 minutes. Add the rest of the chicken stock and cook 2 minutes.
  2. Stir in the half and half, thousand island dressing, sauerkraut, and corned beef. Let simmer for 10 minutes. Add the Swiss cheese and stir until cheese is melted.
  3. Remove from heat and serve
