potato and beef sausage soup
This is my version of potatoe soup with my favorite beef sausage.

Ingredients
- 4-5 slices bacon
- 1 medium carrot, shredded
- 1 medium celery stalk chopped
- 1 medium onion chopped
- 2 cloves garlic choppedt
- 5 medium russet potatoes peeled and cubed
- 1 package gilbert's beef and bleu sausage
- 3 tablespoons flour
- 2 cups chicken broth
- 3 cups water
- 1 - bay leaf
- 1/2 teaspoon thyme, dried
- 1 teaspoon coriander
- 1 teaspoon black pepper
- 1/2 cup sour cream
How To Make potato and beef sausage soup

Step 1In a large pot cook potatoes until just tender drain and set aside. Slice sausages into 1/4 inch slices.

Step 2In an Dutch oven cook bacon until crisp, drain on paper towel.

Step 3Heat 3 tbsp of the drippings add onions, carrots.and celery. Cook until tender. Add garlic salt and pepper. Stir in flour and cook for1 minute.

Step 4Stir in chicken broth and water until slightly thicken. Add bay leaf, thyme, coriander and black pepper. Stir and bring to a boil.

Step 5Lower heat to simmer add potatoes and sausages. Simmer until potatoes are soft and sausages are cooked. Stir in sour cream. Top with bacon and cheese
