Potato and Beef Sausage Soup

This is my version of potatoe soup with my favorite beef sausage.

carrot, shredded
1 medium
celery stalk chopped
1 medium
onion chopped
2 clove
garlic choppedt
5 medium
russet potatoes peeled and cubed
1 pkg
gilbert's beef and bleu sausage
3 Tbsp
2 c
chicken broth
3 c
bay leaf
1/2 tsp
thyme, dried
1 tsp
1 tsp
black pepper
1/2 c
sour cream

How to Make Potato and Beef Sausage Soup


  • 1In a large pot cook potatoes until just tender drain and set aside. Slice sausages into 1/4 inch slices.
  • 2In an Dutch oven cook bacon until crisp, drain on paper towel.
  • 3Heat 3 tbsp of the drippings add onions, carrots.and celery. Cook until tender. Add garlic salt and pepper. Stir in flour and cook for1 minute.
  • 4Stir in chicken broth and water until slightly thicken. Add bay leaf, thyme, coriander and black pepper. Stir and bring to a boil.
  • 5Lower heat to simmer add potatoes and sausages. Simmer until potatoes are soft and sausages are cooked. Stir in sour cream.
    Top with bacon and cheese
