A (copycat) Olive Garden Recipe

Ingredients

  • 2 pounds ground beef
  • 1 - onion, chopped
  • 3 - carrots, peeled and chopped
  • 4 - celery stalks, chopped
  • 2-28oz cans diced tomatoes, undrained
  • 16 oz cans red kidney beans, drained
  • 16 oz cans white kidney beans, drained
  • 30 ounces beef stock
  • 3 teaspoons oregano
  • 2 teaspoons pepper
  • 5 teaspoons parsley
  • 20 oz jars spaghetti sauce (i used pasta house brand)
  • 8 ounces pasta, rotini

How To Make pasta e fagioli crockpot soup

  • Step 1
    Brown beef in a skillet.
  • Step 2
    Drain fat from beef and add to crock pot with everything except pasta.
  • Step 3
    Cook on low 7-8 hours or high 4-5 hours.
  • Step 4
    During last 30 minutes on high or 1 hour on low, add pasta.
