This is one of my quick go-to lunch or dinner recipes. We eat an ancestral diet so no processed foods here! Luckily nobody ever thinks this is anything other than delicious.

Ingredients

  • 4 tablespoons butter (reduce this if you like, our eating plan includes lots of fats)
  • 1/2 pound ground beef
  • 1/2 - onion, chopped
  • 1 - carrot diced
  • 1 - rib celery, diced
  • 2 cups beef stock
  • 1 cup shredded cheddar cheese, or more!
  • 1 1/2 cups milk
  • - salt and pepper
  • - optional - broccoli flowers, green beans, diced potatoes

How To Make pam's cheesy beef soup

  • Step 1
    Brown beef and onions in the butter.
  • Step 2
    Add the rest of the vegetables, broth, and salt and pepper.
  • Step 3
    Simmer until vegetables are done.
  • Step 4
    Add milk and cheese and warm until cheese is melted and incorporated. Stir frequently. Add more milk if too thick. Serve.
  • Step 5
    OPTIONAL - Sometimes I add diced potatoes, sometime I add broccoli or green beans. It's also good with green chilies!
