Ingredients
- 2 pounds ground beef
- salt & pepper
- 4 large potatoes, peeled and cubed
- 2 teaspoons smoked paprika
- 2 teaspoons herbs de Provence
- 1 large carrot, peeled and sliced
- 3 large celery stalks, chopped
- 1 medium onion, sliced
- 6 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon chipotle chili powder
- 3 cups beef broth
- 3 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon tarragon
How To Make my poor man's stew

Step 1Brown the ground beef in a skillet and season with salt and pepper. Drain and add to crock pot.

Step 2Place the potatoes on top and season with smoked paprika and herbs de Provence.Top with carrots, celery, onion, and garlic. Season with oregano and chipotle chili powder.

Step 3Mix the beef broth, tomato paste, and Worcestershire together. Pour over the all the ingredients in the crock pot. Sprinkle with Tarragon. Cook on low for 8 hours.
