I live in AZ, so it doesn't really feel like fall. But when I make this soup it helps. Also, it is one of my very few original recipes.

Ingredients

  • 1 lb - ground beef or 1/2 beef, 1/2 ital sausage
  • 2-3 tablespoons olive oil or butter to saute
  • 1 cup chopped onion
  • 8 cups chicken broth
  • 1 cup carrots, celery, potatoes & leeks if desired
  • 1 - bay leaf
  • pinch - basil, dried

How To Make my autumn soup

  • Step 1
    In a large pot saute onion, chopped up carrots, celery & leeks in oil or butter until soft.
  • Step 2
    Add potatoes & meat. Cook until meat is browned.
  • Step 3
    Add rice or noodles, chicken broth, basil & bay leaf & cook 1 to 2 hours.
  • Step 4
    Add salt & red pepper flakes to taste if desired. Serve with croutons or crackers or bread & butter.
