Ingredients
- 2 pounds beef short ribs
- 1 medium onion, diced
- 2 tablespoons garlic, minced
- 6 - celery ribs, sliced
- 6 cups water
- 2/3 cup pearl barley, uncooked
- 1 tablespoon dill, dried
- pinch salt
- pinch pepper
- 2 pounds mushrooms
How To Make mushroom-barley soup with short ribs

Step 1Place ribs, onion, garlic and celery in a soup pot; add the liquid, cover, bring to a boil and simmer over low heat for 1 hour.

Step 2Add the barley, dill, salt and pepper and cook another 50 minutes.

Step 3Add the mushrooms and cook another 10 minutes.

Step 4Serve piping hot.

Step 5NOTE: May use chicken stock instead of water.
