mushroom-barley soup with short ribs

Ingredients

  • 2 pounds beef short ribs
  • 1 medium onion, diced
  • 2 tablespoons garlic, minced
  • 6 - celery ribs, sliced
  • 6 cups water
  • 2/3 cup pearl barley, uncooked
  • 1 tablespoon dill, dried
  • pinch salt
  • pinch pepper
  • 2 pounds mushrooms

How To Make mushroom-barley soup with short ribs

  • Step 1
    Place ribs, onion, garlic and celery in a soup pot; add the liquid, cover, bring to a boil and simmer over low heat for 1 hour.
  • Step 2
    Add the barley, dill, salt and pepper and cook another 50 minutes.
  • Step 3
    Add the mushrooms and cook another 10 minutes.
  • Step 4
    Serve piping hot.
  • Step 5
    NOTE: May use chicken stock instead of water.
