I love soup in the cold weather. This was my spin on several recipes I've read online that sound yummy. It turned out great!

Ingredients
- 1 pound italian sausage, no casings
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 1/2 teaspoons sweet basil
- 1 teaspoon oregano, dried
- 1 medium red or orange pepper, diced
- 2 small zucchini, chopped
- 2 cans beef broth
- 1 can vegetable broth
- 1 can petite diced tomatoes
- 1 can cannelini beans
- 1 pinch crushed red pepper
- 1 - bay leaf
How To Make momma's italian soup

Step 1Brown Italian sausage with garlic, diced pepper, and diced onion. Drain and add to stock pot.

Step 2Add in basil, oregano, tomatoes, bay leaf, a good sprinkle of crushed red pepper, and vegetable stock. Bring to slow simmer.

Step 3Add chopped zucchini, cannelini beans, beef broth, and 2 cans of water. Let simmer until zucchini is tender.

Step 4Top with freshly grated Parmesan cheese.
