I love soup, I love cheeseburgers, so this pretty much puts them together for an awesome tasting soup!

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 2 large carrot, finely diced
  • 1 large rib of celery finely diced
  • 1 tablespoon dried parsley
  • 4 large potatoes, diced into cubes
  • 3 cups chicken broth
  • - 1/4 of a (32 oz.) brick of velveeta, cut into cubes
  • 2 cups whole milk mixed with 1/4 c. flour until smooth
  • 1/4 cup sour cream
  • 2 tablespoons butter
  • 1 package real bacon bits & pieces.

How To Make mmmm bacon cheeseburger soup from the instant pot!

  • Step 1
    Select the SAUTE button on your Instant Pot.
  • Step 2
    Add ground beef, carrot, celery, onion and dried parsley. Brown meat and soften vegetables.
  • Step 3
    Press CANCEL on Instant Pot.
  • Step 4
    Drain grease off meat mixture and return to Instant pot.
  • Step 5
    Add potatoes and chicken broth to pot.
  • Step 6
    Cover and lock the lid. Make sure the steam releasing handle is pointing to sealing.
  • Step 7
    HIGH pressure for 4 minutes.
  • Step 8
    When cook time is finished, use quick release. When pressure is released, remove lid.
  • Step 9
    Select the SAUTE button and bring broth back to a simmer.
  • Step 10
    Stir in milk mixed with flour, velveeta cubes, sour cream, real bacon bits and remaining tablespoon of butter. Continue to stir until smooth and thickened.
  • Step 11
    Press CANCEL on Instant Pot.
  • Step 12
    Ladle soup into bowls and serve!
