Ingredients
- 1 pound ground beef
- 1 pound bulk port sausage
- 2 cans diced tomatoes (14 1/2 oz. each)
- 2 medium green peppers, cut into 1/2" pieces
- 2 cups thinly sliced celery
- 1 cup chopped onion
- 6 medium zucchini, halved & cut into 1/2" slices
- 1 cup tomato juice
- 1 teaspoon italian seasoning-i use herb de provence
- 1 teaspoon dried oregano
- - grated parmesan cheese
How To Make sausage, ground beef & zucchini stew

Step 1In dutch oven or large saucepan, over medium heat, cook beef & sausage until no longer pink; drain & set aside.

Step 2Drain tomatoes, reserving juice; set tomatoes aside. In the same pan, combine the peppers, celery, onion & reserved juice. Cover & cook over medium heat for 10 minutes.

Step 3Add meat, tomatoes, zucchini, tomato juice & seasonings. Cover & cook 15 minutes or until zucchini is tender, stirring occasionally.

Step 4Serve, garnish with cheese.
