Ingredients

  • 2.5 pounds round steak or top round, cut into 1" cubes
  • 6 ounces can tomato paste
  • 8 large potatoes, peeled and quartered
  • 1/4 cup olive oil
  • 1/2 teaspoon oregano
  • 1/2 cup red or white wine
  • - salt and pepper to taste

How To Make meat and potato stew

  • Step 1
    Heat olive oil in 6 quart pot; add beef, salt, pepper and oregano.
  • Step 2
    Brown well.
  • Step 3
    Add tomato paste, wine and water until meat is almost covered.
  • Step 4
    Mix liquids well until gravy thickens slightly.
  • Step 5
    Simmer 45 minutes.
  • Step 6
    Add potatoes and simmer until fork tender, stirring occasionally about 15-20 minutes.
  • Step 7
    Serve hot with fresh Italian bread.
