When I lived in New Mexico, my best friend made this soup all the time....I had to have the recipe!

Ingredients

  • 1 3/4 pounds ground chuck
  • 1 - large onion, chopped
  • 2 cloves garlic, minced
  • 2 - 14.5 ounces cans diced tomatoes with juice
  • 16 ounces can kidney beans, drained
  • 16 ounces can pinto beans, drained
  • 16 ounces can black beans, drained
  • 15 1/4 ounces can whole kernal corn, drained
  • 14 1/2 ounces can chicken broth
  • 1 package taco seasoning mix

How To Make maria's taco soup

  • Step 1
    In a large pot, cook beef, onion and garlic. Drain and return to pot.
  • Step 2
    Stir in rest of ingredients. Bring to boil, reduce heat and simmer uncovered for about 30 minutes. Serve with taco strips, fried or baked until crisp. Serve with a dollop of sour cream, chopped green onions and grated cheese on top for garnish if desired
