When I lived in New Mexico, my best friend made this soup all the time....I had to have the recipe!

1 3/4 lb
ground chuck
large onion, chopped
2 clove
garlic, minced
2 - 14.5 oz
cans diced tomatoes with juice
16 oz
can kidney beans, drained
16 oz
can pinto beans, drained
16 oz
can black beans, drained
15 1/4 oz
can whole kernal corn, drained
14 1/2 oz
can chicken broth
1 pkg
taco seasoning mix

How to Make Maria's Taco Soup


  • 1In a large pot, cook beef, onion and garlic. Drain and return to pot.
  • 2Stir in rest of ingredients. Bring to boil, reduce heat and simmer uncovered for about 30 minutes. Serve with taco strips, fried or baked until crisp. Serve with a dollop of sour cream, chopped green onions and grated cheese on top for garnish if desired
