Maria's Taco Soup

When I lived in New Mexico, my best friend made this soup all the time....I had to have the recipe!

1 3/4 lb
ground chuck
large onion, chopped
2 clove
garlic, minced
2 - 14.5 oz
cans diced tomatoes with juice
16 oz
can kidney beans, drained
16 oz
can pinto beans, drained
16 oz
can black beans, drained
15 1/4 oz
can whole kernal corn, drained
14 1/2 oz
can chicken broth
1 pkg
taco seasoning mix


1In a large pot, cook beef, onion and garlic. Drain and return to pot.
2Stir in rest of ingredients. Bring to boil, reduce heat and simmer uncovered for about 30 minutes. Serve with taco strips, fried or baked until crisp. Serve with a dollop of sour cream, chopped green onions and grated cheese on top for garnish if desired
