leftover meatloaf soup
After a fun visit from my daughter, who lives on the other side of the country, and some comfort food cooking, I had some leftovers to create with. There are no onions in the ingredient list because the meatloaf had a lot of onions in it. The meatloaf was a mix of beef, pork, and turkey. Substitute any sauce you prefer for the Indian butter chicken sauce.

Ingredients
- 3 cups water
- 2 carrots, sliced
- 1 stalk celery, sliced
- 1/4 cup chickpeas
- 2 slices meatloaf
- 1/2 cup iceberg lettuce
- 1 teaspoon beef Better Than Bouillon
- 1/3 cup cooked long grain rice
- 2 tablespoons leftover sauce from an Indian butter chicken dish, for flavour
How To Make leftover meatloaf soup

Step 1Boil the water in a soup pot. Add carrots and celery and simmer for about 5 minutes.

Step 2Add remaining ingredients except rice and Indian seasoning, and simmer for 10 minutes.

Step 3Add rice and Indian seasoning and simmer for 5 minutes more.
