Ingredients
- 1 1/2 pounds green onion sausage
- 1 cup onions, chopped
- 1 cup carrots, cubed crinkle cut
- 8 ounces fresh mushrooms, sliced
- 2 cloves garlic, minced
- 1 can 14 1/2 ounce can diced tomatoes, with basil and oregano
- 4 cups chicken broth, low sodium
- 1 can tomato sauce, 15 ounces
- 1/2 teaspoon italian seasoning, dry
- 1 1/2 cups bow pasta
- 2 cups spinach, fresh
- 2 cups grated mozzarella cheese
- 1/2 cup parmesean cheese
- - fresh basil, chopped (optional)
How To Make lasagna soup

Step 1Remove sausage from casing and brown in skillet over medium heat. Add onions, mushrooms, carrots and garlic and saute with meat for 3 minutes.

Step 2Add the next four ingredients and bring to a boil. Add pasta and simmer for about 10 minutes. Stir in spinach and cook until wilted.

Step 3Put 1/2 in bottom of bowl and pour soup on top. Garnish with Parmesan cheese and fresh basil.
