Another 'new kid on the block' at my house! Quick easy cook for after work that is BIG on flavor...

Ingredients

  • 1 1/2 pounds green onion sausage
  • 1 cup onions, chopped
  • 1 cup carrots, cubed crinkle cut
  • 8 ounces fresh mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 can 14 1/2 ounce can diced tomatoes, with basil and oregano
  • 4 cups chicken broth, low sodium
  • 1 can tomato sauce, 15 ounces
  • 1/2 teaspoon italian seasoning, dry
  • 1 1/2 cups bow pasta
  • 2 cups spinach, fresh
  • 2 cups grated mozzarella cheese
  • 1/2 cup parmesean cheese
  • - fresh basil, chopped (optional)

How To Make lasagna soup

  • Step 1
    Remove sausage from casing and brown in skillet over medium heat. Add onions, mushrooms, carrots and garlic and saute with meat for 3 minutes.
  • Step 2
    Add the next four ingredients and bring to a boil. Add pasta and simmer for about 10 minutes. Stir in spinach and cook until wilted.
  • Step 3
    Put 1/2 in bottom of bowl and pour soup on top. Garnish with Parmesan cheese and fresh basil.
