green onion sausage
1 c
onions, chopped
1 c
carrots, cubed crinkle cut
8 oz
fresh mushrooms, sliced
2 clove
garlic, minced
1 can(s)
14 1/2 ounce can diced tomatoes, with basil and oregano
4 c
chicken broth, low sodium
1 can(s)
tomato sauce, 15 ounces
1/2 tsp
italian seasoning, dry
1 1/2 c
bow pasta
2 c
spinach, fresh
2 c
grated mozzarella cheese
1/2 c
parmesean cheese
fresh basil, chopped (optional)

How to Make Lasagna Soup


  • 1Remove sausage from casing and brown in skillet over medium heat. Add onions, mushrooms, carrots and garlic and saute with meat for 3 minutes.
  • 2Add the next four ingredients and bring to a boil. Add pasta and simmer for about 10 minutes. Stir in spinach and cook until wilted.
  • 3Put 1/2 in bottom of bowl and pour soup on top. Garnish with Parmesan cheese and fresh basil.
